Instructions

Step 1
Set instant pot to saute and add coconut oil until melted
Step 2
Add 1 tbsp of water and the shallots, garlic and ginger. Stir until shallots are soft
Step 3
Add curry powder, coconut, salt, sugar, turmeric and cayenne pepper. Stir
Step 4
Add lentils, coconut oil and 1 cup of water. Stir to coat lentils
Step 5
Cook for 15mins on high pressure. Then let pressure release naturally
Step 6
Stir in lemon and coriander
