Quick Weeknight Ground Pork Hash

Instructions

Step 1
Heat oil in a large skillet over Medium heat. Add potatoes and stir to coat with oil. Season with half of the garlic powder, Italian seasoning, and seasoned salt. Cook 8-10 minutes until nicely browned and close to being cooked through. (You can increase the heat if needed, bit mine was fine at medium)
Step 2
Add onion and cook, stirring occasionally, 5 minutes.
Step 3
Scoot everything to one side of the pan and add ground pork to the other side. Season with the rest of the seasonings. Begin cooking, breaking up as you go. When it's about half done, mix with potatoes and onions and cook until no longer pink, stirring occasionally.
Step 4
When pork is cooked, top with grated Parmesan and then stir cheese into the sausage mixture. Taste and add more seasoning as necessary (I don't cook with a lot of salt so it's probably going to need it for a normal human).
Step 5
Spoon into bowls and top with more Parmesan, ketchup and/or hot sauce to serve.
Step 6
VARIATION: You can also stir a can of drained Italian seasoned diced tomatoes into this since it is a bit dry. I've also added a splash or two of chicken or beef broth to the potatoes while they're cooking for some extra flavor and moisture. Finally, any kind of ground meat will work. Italian sausage is really good. Cut back on the other seasonings if using it, then taste and season at the end.
