Instructions
Step 1
Season chicken with salt and pepper on both sides and lightly dust skin with cornstarch.
Step 2
Heat pan on medium heat with oil then pan-fry chicken skin side down for 6-8 minutes until golden brown and crispy.
Step 3
Cook other side for a few more minutes or until chicken reaches 165°F.
Step 4
Remove chicken and add garlic, ginger, sake, mirin, and sugar to the pan.
Step 5
Simmer on medium low heat for a few minutes until the sugar is dissolved making sure to scrape off any chicken bits(fond) left in the pan.
Step 6
Add soy sauce and cornstarch slurry to thicken the sauce.
Step 7
Add back the chicken and coat it in the garlic sauce
Step 8
Serve with rice and top with toasted sesame seeds
