Chicken Fajita Mac n Cheese

• When seasoning the chicken, make sure it’s well seasoned by adding more spices if needed. • Cook the chicken on medium heat for 6-8 mins till golden brown then set aside. • Cook the onions and peppers for 5mins at least till soft and fragrant. • When adding the milk and cream cheese make sure the heat is on LOW to prevent the creamy sauce from splitting • Cook the macaroni in boiling water for 7-8 mins then drain and remove. • After adding the macaroni and chicken back in the pan, give it all a final mix till well combined. • Best to reheat this in a microwave or a pan with a splash of milk to make it creamy again!

Instructions

Step 1
First slice your chicken breast into cubes, add the fajita seasoning mix with olive oil and lime juice. Mix till you lose patience! Boil your macaroni pasta for 8 mins then set aside.
Step 2
Next get a pan on medium heat, cook the chicken in light butter for 6-8 mins till golden brown then set aside.
Step 3
In the same pan add your chopped onions and bell peppers with extra fajita seasoning. Cook this for 5 mins till soft and fragrant.
Step 4
Then lower the heat completely and add milk, cream cheese, cheddar and mozzarella. Mix till the cheese melts and the sauce is cheesy and creamy.
Step 5
Add the cooked macaroni in the creamy sauce, give it a good mix, add the cooked chicken with a squeeze of lime juice. Give it a final mix then serve and ENJOY!
