Ingredients

1 tablespoonextra-virgin olive oil
1onion
small, finely chopped
2garlic cloves
thinly sliced
⅛ teaspoonsalt
⅛ teaspoonfreshly ground black pepper
2 x 6 ounceboneless skinless chicken breasts
cut into 1-inch cubes
1 x 10 ouncefrozen chopped spinach
package, thawed, well drained
2 ouncesreduced-fat cream cheese
cubed
3 cupslower-sodium chicken broth
Instructions
Step 1
In a medium heavy-bottomed saucepan, heat oil over medium heat.
Step 2
Add onion, garlic, salt, and pepper; cook, stirring occasionally, until onion is softened, about 7 minutes.
Step 3
Add chicken and spinach; stir for 1 minute.
Step 4
Add cream cheese and stir until melted.
Step 5
Add broth, bring to a simmer, and simmer until chicken is cooked through, about 5 minutes. Serve warm.
