1 ribcelery

2cloves of garlic

1ham hock

1 x 14.5 ozcan diced tomatoes

1 x 15 ozcan kidney beans

1 x 15 ozcan cannellini beans

6 cupschicken broth

1 tspdried basil

1 tspdried oregano

½ tspsalt

¼ tspblack pepper

1 cupditalini
uncooked, or elbow macaroni

2 cupsfresh spinach

Instructions
Step 1

Heat the oil in a large pot over medium heat. Add the onion, carrot, and celery and cook until the vegetables are softened, about 5 minutes.




Step 2
Add the garlic and cook for 1 minute.

Step 3

Add the ham hock, tomatoes, kidney beans, cannellini beans, chicken broth, water, basil, oregano, salt, and black pepper. Bring the mixture to a boil.

Reduce the heat to low, cover, and simmer the soup for 2 hours.

Remove the ham hock from the pot and let it cool. Once the ham hock is cool enough to handle, remove the meat from the bone and cut it into bite-sized pieces.
