Firecracker Cheddar Burgers

A bit of cayenne pepper gives these burgers a subtle kick of heat. If you're expecting kids, leave some of the meat unseasoned. And, if you know you have a hungry crowd coming, double the recipe. Phase 1 dieters can enjoy the burger without the bun. MAKE-AHEAD: Beef mixture can be formed into patties the morning of the party. Keep well wrapped and refrigerated until ready to cook. Instructions

Step 1
Whisk together mustard, onion, garlic, egg yolks, and cayenne in a large bowl. Add beef and stir until combined. Form mixture into 10 patties, about 3/4 inch thick.
Step 2
Lightly oil a grill or grill pan and heat to medium-high. Cook burgers 4 to 5 minutes per side for medium-rare, sprinkling cheese evenly over burgers for the last 2 minutes of cooking.
Step 3
Serve burgers on lightly grilled buns.
