Stuffed tiny mushrooms

Make this easy recipe for a dinner party and surprise your guests with these tiny drops of heaven. Tips: washing the mushrooms will make them soggy, best clean them with paper towels. A 200g pack of small mushrooms is about 10 mushrooms - which would be a good taster for around 5 people. If using bigger mushrooms (like Portobello) this would be a nice dinner. This recipe is meant to be easy and quick, to use up what's in the fridge - get creative with it!

Instructions

Step 1
Prepare your mushrooms by removing the stems and gently cleaning them with a paper towel

Melt 2 tablespoons of butter in the microwave for about 10 seconds

Using a cooking brush, gently brush your mushrooms on the inside of the crown, where you will add the stuffing

To prepare your stuffing: wash and cut your cherry tomatoes in small pieces and add them to a small mixing bowl

Lightly season the tomatoes with salt and black pepper.

Add the remaining ingredients: ham (in small pieces), shredded cheese, oregano, parsley and mix well

Using a teaspoon, gently stuff the mushrooms, being careful as not to break them

Sprinkle breadcrumbs and parmesan cheese on top for a nice crust

Pop them in the oven at about 200°C for 10-15 minutes, or until the cheese has a soft golden colour and enjoy!
