150gbutter
softened

90gdark brown sugar
packed

50gwhite sugar

1egg

1 teaspoonvanilla essence

1 tspcoffee essence
optional

Β½ teaspoonbicarbonate of soda

ΒΌ teaspoonflaky salt

1 teaspoonpowdered instant coffee

250gplain flour
For the coffee cream
Instructions
Step 1
Mix the butter and sugars until fully combined.



Step 2
Add the egg, vanilla essence and coffee essence (optional). Mix well.



Step 3
Add the bicarbonate of soda, salt, instant coffee and flour and mix until you get a smooth cookie dough.




Step 4

Form 20 small cookie dough balls and place on a baking tray, lined with parchment paper. Using a teaspoon, push down in the middle of each cookie to form a small dent.
Step 5

Bake in the oven at 180 degrees celsius for 10-11 minutes. The cookies should still be slightly soft when you take them out. Use a teaspoon to gently push down the middle again.
Step 6

Make the coffee cream by mixing the mascarpone, double cream, powdered sugar and instant coffee until you get a smooth consistency. Add approximately 1 teaspoon of the coffee cream to each cookie. Dust with powdered instant coffee or cocoa. ENJOY! πͺβοΈ
