Apple Cake with Chickpea Puree

Instructions

Step 1
Preheat the oven to 180C.
Step 2
Peel the apples, remove the core and cut into 1cm cubes, roughly.
Step 3
Mix the chopped apples with the 20g of sugar and 1 tablespoon cinnamon.
Step 4
Place the chickpeas and eggs in a food processor and blend until smooth. Remove the puree and set aside; but no need to wash the food processor.
Step 5
Add the butter, vegetable oil and brown sugar in the food processor and blend until well combined.
Step 6
Add the chickpea puree mixture along with the vanilla to the food processor and blend again.
Step 7
Add the flour, milk, baking powder, cinnamon, nutmeg and salt to the food processor and blend very well until all ingredients well combined.
Step 8
Grease a 22 x 32cm dish. Spread the mixture out in the dish then place the apple evenly on top of the mixture. With the back of spoon press the apple into the mixture and stop when you can see some of the mixture coming through the apples.
Step 9
Bake in the middle of the oven for 60 minutes or until a knife that is inserted into the middle of the cake comes out clean.
Step 10
Cool completely then cut into 20 pieces.
