Italian beef rice pilaf

Instructions

Step 1
Heat the oil and Saute garlic, onion, carrot, celery, fennel and chilli for 5 mins in a large pot over high heat

Add the beef and 1/2 tsp salt cook breaking it up until brown
Step 3
Add the rice and stir to coat in the oil, add other ingredients and stir until it comes to a simmer. Reduce heat to low and cover with a lid. Do not stir again.
Step 4
Cook for 22 mins on low heat until rice is tender (there should still be a layer of liquid) remove from stove and rest covered for 5 mins
Step 5
Serve with chopped parsley stirred through just before plating and top with parmesan as desired
