Step 1
1. Fill a large Dutch oven with water to depth of 1/4 inch. arrange cauliflower in Dutch oven. Cook, covered, over medium-high 7 to 10 minutes or until tender. Drain.
Step 2
2. Process cauliflower, sour cream, butter, cream, and salt in a food processor 30 seconds to 1 minute or until smooth, stopping to scrape down sides as needed. Sir in Parmesan cheese and chives. Serve immediately. Garnish with additional chives, if desired.
