Anytime I’m making mashed potatoes I always put on some extra just so I can make these as a snack because they are so tasty .

Cook and mash potatoes then let them cool add salt and pepper to taste then white pepper garlic powder and onion powder . Mix with your hands and shape into 4 large Pattie’s (or more smaller ones )

Add fresh mozzarella to the Centre of each one then fold the potato and seal the cheese inside .

Dip each Pattie into flour then coat in egg and tsp off the excess and finally coat in the breadcrumbs . Spray with oil and bake in the airfryer for 10 minutes at 200 c /400 f until golden and crispy. Alternatively bake or fry on a pan. I like to add chili sauce with these . Enjoy .
