Instructions
Step 1
Chop your chorizo into smallish cubes, and fry without oil until crispy.
Step 2
Remove a third of the crispy chorizo and set aside for garnish.
Step 3
Add your red onion and garlic to the pan and cook until onions have softened.
Step 4
Add in your chopped sweet potatoes, chicken stock, oregano, rosemary and thyme. Add salt and pepper to taste.
Step 5
Bring to boil and simmer until potatoes are soft.
Step 6
Blitz until soup is smooth, then stir in honey.
Step 7
Ready to serve and enjoy.
