Ingredients

5 mlsextra virgin olive oil
500 gmslean chuck steak
fat trimmed, cut into 3cm cubes
1brown onion
diced
1red capsicum
diced
300 gmsgreen beans
cut into 2cm long pieces
200 gmsmushrooms
sliced
2cloves garlic
crushed
4 tsppaprika
1 tspcumin
50 gmstomato paste
15 gmsfresh thyme
roughly chopped
1 Lbeef stock
250 gmsbasmati rice
15 gmsplain flour
Instructions
Step 1
Heat oil in a large pot over high heat and brown the beef in batches. Remove and set aside.
Step 2
Add the onion, capsicum, green beans, mushrooms and garlic and cook, stirring, for 5 minutes.
Step 3
Stir in the paprika, cumin and tomato paste and cook for 1 minute. Add the thyme and stock.
Step 4
Return beef to the pot. Bring to the boil and then reduce the heat. Cover and simmer for 90 minutes or until the beef is tender.
Step 5
Cook rice according to packet instructions.
Step 6
Mix the flour with a little water (1-2 tsp) and add gradually to the pan, stirring constantly, until the sauce has thickened.
Step 7
Divide rice into four serves and top with beef goulash. Store leftovers in the fridge.
