For the Sauce:

550gminced meat
any kind

1onion
medium, diced

1red pepper
diced

4mushrooms

Sauce:
Step 1

Firstly, peel, slice and dice the onion. Then put in it a deep pan with some oil or butter. Fry it lightly translucent in colour.

Step 2

Meanwhile, slice and dice the mushrooms. Once onion is translucent, add in the mushrooms and fry until onion is browned.


Step 3

Add in the mince meat and sprinkle seasoning on top. Mix it well and let it cook until the meat is (brown if beef, white if pork, chicken or turkey).

Meanwhile the meat is cooking, cut the rest of the vegetables. For the cauliflower I am just cutting it into small florets.

Step 5

Once the meat is cooked, add in diced peppers, cauliflower, and any other vegetables. NOTE: If you are using Spinach, make sure to cut in small pieces, and add AFTER the sauce (last thing).






Step 6

Let that cook for about 5 minutes. Then add the red lasagna sauce and mix well. Cook for another 5-10 minutes, until the vegetables are Al Dente. They don't need to be soft because they will cook once in the oven too.

Step 7

Turn off the heat and add in spinach (if using) and mix well. Leave it on with a lid. IF NOT, make sure it isn't too runny, otherwise your lasagna will turn out sloppy. If it is runny, put it on low heat and cook until some of the liquid evaporates.
Step 8

Meanwhile, put some pasta sheets in an empty dish or container, and pour in luke-warm water. Let them soak until more flimsy and then place them in the dish you want to bake in.

Assembly:

Add a spoon if white sauce on the bottom of the dish just to cover the surface.


Step 10

Add a layer of the sauce you made earlier.

Then add a layer of white sauce on top, and another layer of pasta, but do it criss cross from the first layer.
Step 12
Make sure to be soaking the other sheets meanwhile. Add mince sauce again, white sauce, and pasta.
Step 13

On the last layer, add white sauce on top of the pasta, and sprinkle cheese on the top.

Step 14

Set the oven to 180°C/160°C Fan/356°F. Put the lasagna into the preheated oven and bake for 45-60 minutes. Once the cheese is melted and crispy, and the sides are bubbling, it should be done!
