Ingredients

1 lbground beef
1onion
small, diced
2cloves garlic
minced
1 teaspoonground cumin
1 teaspoonpaprika
½ teaspoonchili powder
salt
to taste
pepper
to taste
½ cupshredded cheddar cheese
or your preferred cheese
1 packageempanada dough
store-bought, or make your own
1egg
beaten, for egg wash
1 tablespoonolive oil
for cooking
Fresh cilantro
chopped, optional, for garnish
Instructions
Prepare the filling:
Step 1
In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes.
Cook the beef:

Add the ground beef to the skillet, breaking it up as it cooks. Season with cumin, paprika, chili powder, salt, and pepper. Cook until the beef is browned and fully cooked, about 8-10 minutes. Remove from heat and allow to cool slightly.
Add cheese:

Once the beef mixture has cooled a bit, stir in the shredded cheese until well combined.
Assemble the empanadas:

Preheat your oven to 375°F (190°C). Roll out the empanada dough if using homemade or prepare the pre-made dough. Place a spoonful of the beef and cheese mixture in the center of each dough circle. Fold the dough over to form a half-moon shape, and press the edges with a fork to seal.
Egg Wash:

Brush the tops of the empanadas with the beaten egg to give them a golden, crispy finish when baked.
Bake:

Place the empanadas on a baking sheet lined with parchment paper and bake in the preheated oven for 18-20 minutes, or until golden brown.

Let the empanadas cool slightly before serving. Garnish with fresh cilantro if desired.
