Chicken & Leek Pie

Chicken & Leek Pie Serves 4. 700 cals and 30g protein per serving. You need: 3 large chicken breast -80g diced pancetta or bacon -1 small onion -2 leeks -1 head of broccoli -3 cloves garlic -1 tub Philadelphia (165g) -just under 1/2 bottle white wine (about 300ml) -salt & pepper -fresh sage (5-6 leaves) - handful fresh parsley -1 sheet puff pastry -1 heaped tsp flour -1 heaped tsp whole grain mustard How: 1) preheat oven to 180 Celcius. 2) add your bacon to a cold pan and allow fat to render out before adding in you diced chicken and fresh sage. 3) add in your sliced leek, onion & garlic and stir together for a minute or 2 before adding your mustard and deglaze with your wine. 4) add your broccoli & parsley and sweat with lid on for 5mins. 5) add your cream cheese and stir together and season. Allow to cool 6) top oven proof dish with your pastry (I used a round dish so cut my pastry into squares and layered them). 7) brush with a beaten egg and bake for 25-30mins until pastry is golden

1) preheat oven to 180 Celcius.

2) add your bacon to a cold pan and allow fat to render out before adding in you diced chicken and fresh sage.
