In a food processor, blitz together: In a food processor, blitz together:
1 handful of cilantro
1 tbsp apple cider vinegar
1 tbsp smoked paprika
1 tbsp onion powder
1 tsp cayenne pepper
1 tsp kosher salt
5 cloves garlic
1 tsp cracked black pepper
Juice of one lime
1/4 cup extra virgin olive oil Blitz the marinade to a chunky consistency and pour it over top of the scored chicken breasts. Toss the chicken in the marinade to coat thoroughly.
Optional: Refrigerate for 1-3 hours. (I don’t do this for thin chicken breasts) Place chicken breasts on a sheet pan & bake @ 450 for 15-18 minutes, depending on thickness. Serve with rice, black beans & avocado
