Step 1
Season your beef shoulder roast with Carne asada seasoning all over and place into your crock pot. Pour the birria sauce over top of the roast and cook on low for 8-9 hours.
Step 2
Once your meat is done cooking, pull the meat apart (if should be very tender and pull apart easily) and place back into the crock pot with the sauce.
Step 3
Heat a large skillet over medium-high heat. Dip tortillas into birria sauce to coat both sides.
Step 4
Place coated tortilla into the heated sauce pan and put approximately 1/4 cup meat onto one side of the tortilla. Top meat with quesadilla cheese and fold the tortilla in half.
Step 5
Cook for 3-5 minutes on both sides or until the tortilla is crispy.
Step 6
Serve immediately. Top with cilantro, red onion, jalapeños, or your favorite topping.
