Instructions
Step 1
Heat skillet with vegetable broth or water (not EVO). Add garlic.
Step 2
Crumble in tofu, sprinkle with chili powder, cumin, cayenne, salt and pepper. Sauté 2-3 minutes.
Step 3
Add water, stirring to allow tofu to absorb the seasonings and water.
Step 4
Stir in black beans and sauté 2-3 minutes more. Add cilantro and adjust the seasoning to taste
Step 5
Serve wtih salsa, ranghero sauce (p272) (avocado, sour cream)
