Cheese and ham bran muffins

Perfect way to get roughage into children and teens. I apologise if you find this recipe isn't perfect. It's based on a very good banana bran muffin recipe my mum gave me and it is a work in progress.

Ingredients

Dry Ingredients
Filler

1 cupcheese
grated, retain 1 tbs for sprinkling, eg cheddar or edam

1 tspground cumin

1 tspcumin seeds
omit if using cheese with cumin seeds

1 sliceham
cut into 5mm/ 1/4” squares
Wet ingredients
Sprinkle
Instructions
Step 1
Oven 165°C fan

Step 2
Mix dry ingredients together in large pudding bowl, use a fork to fluff up.








Step 3
Add cheese, ham and cumin and toss to coat. Mix filler to evenly distribute throughout.




Step 4
Mash tofu (if using), beat tofu or yoghurt with a wooden spoon until creamy.



Step 5
Beat egg in small pudding bowl. Add oil and emulsify. Mix yoghurt or tofu in and keep beating until the batter is smooth. Add a splash of milk if it's too thick.




Step 6
Gently mix wet into dry ingredients.

Step 7
Spoon into muffin tin using black Ikea spoon. If you like, you can use muffin papers but I find they ooze oil and prefer crisp toasted sides to my muffins


Step 8
Sprinkle with remaining cheese

Cook 20-25 mins, until springs when gently presses, no more bubbling sounds and pulls away from edge of tin and you can smell them.
Use a small knife to loosen and cool on rack
