Instructions
Step 1
In a shallow dish, combine flour, salt and pepper. Dredge pork chops in flour mixture.
Step 2
In a large skillet over medium-high heat, add oil. Sear pork chops 1-2 minutes on each side until golden brown. Remove from skillet.
Step 3
Add garlic to the skillet and cook until fragrant. Add vinegar and broth. Stir in tomatoes.
Step 4
Place pork chops back in skillet and bring sauce to a boil. Cover and reduce heat to simmer. Cook 8-10 minutes, until pork chops have an internal temperature of 145F.
Step 5
Serve pork chops topped with tomato mixture and refrigerate leftovers.
