Ingredients

3 lbsSpanish onions
white, brown, shallots are ok too, don’t use red onions
2 Tbspbutter
2 TbspOil
for onions
6 cupsbeef stock
or chicken
2 Tbspflour
1 cupdry sherry
vermouth or any dry white wine- red works too
100gparmesan rind
optional
2bay leaves
50gThyme
1 Tbspfish sauce
for added flavor, optional
1 TbspSoy sauce
for added flavor and umami, optional
1baguette
1 lbGruyere cheese
grated, can use provolone, but I highly suggest splurging for Gruyere
4 TbspButter
reg or garlic
1 tspsalt

Instructions
Step 1
1. Prep onions by thinly slicing pole to pole (they will hold together better).
Step 2
2. In a large pot or dutch oven, add some oil and butter and heat on med-low to low.
Step 3
3. Add onions to the pot and sprinkle in some kosher salt. Heat on low, stirring often to make sure they don’t burn during caramelization. If needed add more oil/butter or a tbsp of stock so they don’t burn.
Step 4
4. This process should take 45 min to 1 hour or longer. You are looking for a deep brown jammy consistency. There will be a lot of fond on the bottom of the pot scrape as you go.
Step 5
5. Add 2 tbsp of flour to the onions and cook it out, 1-2 mins.
Step 6
6. Add 1 cup of wine, thyme, bay leaves and parm rind. Deglaze the pot and cook off the alcohol.
Step 7
7. Add 6 cups of broth and allow to simmer for 15-30 mins.
Step 8
8. Remove thyme and bay leaves from the soup. Add fish sauce and soy sauce to your preference to add umami to the broth. Season with salt, pepper soy/fish sauce to your preference.
Step 9
9. Cut baguette and spread butter on both sides. Toast in oven until golden brown and crispy.
Step 10
10. Assemble soup in crocks for serving add toasted baguette and a generous amount of grated cheese to the top.
Step 11
11. Make sure your oven is on broil and add the crock of soup and cook until golden brown and bubbly on top.
Step 12
12. Serve and enjoy.
