Instructions
Step 1
Chop and pan fry the peppers until softened and lightly charred.
Step 2
Whisk the egg, egg whites, and cottage cheese in a bowl, then pour into the pan with the cooked peppers.
Step 3
Season with salt to taste, and sauté until the eggs are cooked, then set aside.
Step 4
Add a tortilla to the pan and top with cooked egg mixture, beans, and cheese. Fold the tortilla over itself in half and fry both sides until golden brown.
Step 5
Top with chopped cilantro and enjoy!
