Instructions
Step 1
Cook pasta according to packet instructions.
Step 2
Season chicken with 2 tsp of cajun seasoning.
Step 3
Heat oil in a pan over medium heat. Cook chicken. Move to a plate and set aside.
Step 4
Add onions, capsicum and zucchini to a pan. Cook for 5 minutes. Add garlic and remaining cajun seasoning and salt. Cook for another minute.
Step 5
Add diced tomatoes and 1/4 cup of water and bring to a simmer.
Step 6
Add milk and simmer for 3-5 minutes to let the sauce thicken.
Step 7
Add pasta to pan and mix well.
Step 8
Flake chicken into bite-sized pieces and toss through pasta.
Step 9
Divide into two serves and store leftovers in the fridge.
