Step 1
Heat avocado oil. Add thinly sliced onions and minced garlic to hot pan. Cook 2-3 min. Prepare pasta water following the pasta package cooking instructions.
Step 2
Add sliced mushrooms to skillet with onions and garlic. Saute until softened. Add spinach and cook until wilted.
Step 3
Add coconut cream, vegetable broth and seasonings. Mix well and add parmesan cheese.
Step 4
Simmer sauce 2-5 minutes. Drain pasta and slowly add cooked pasta to skillet with vegetables. Add less if you want it more saucy and more if you want a softer flavor.
Step 5
Serve with additional parmesa cheese on top and crushed red pepper flakes if desired.
