Basic Vinaigrette
This is a simple, light, and salt-free vinaigrette for everyday use in your salads. The use of mustard and lemon juice means that we can dispense with the salts. This recipe makes plenty for several uses. It is always easier to knock up a delicious salad when the dressing is ready to hand.

Step 1
Place all the ingredients, except the fresh herbs (optional) in a medium size mixing bowl and, with an electric hand mixer, blend until creamy, scraping down the sides of the bowl as necessary.
