Instructions

Step 1
1. Cook the Chorizo: Heat the olive oil in a large skillet or pot over medium heat. Add the chorizo and cook for 5–7 minutes, stirring occasionally, until it releases its oils and is lightly crispy. Remove chorizo from the pot and set aside, leaving the oil in the pot.

2. Sauté Vegetables: Add the onion, garlic, and bell pepper (if using) to the pot. Sauté for 4–5 minutes until the onion is softened and translucent.
Step 3
3. Add Tomato Paste and Herbs: Stir in the tomato paste (or canned tomatoes) and cook for 2–3 minutes, allowing it to caramelize slightly. Add rosemary or thyme, salt, and pepper to taste.
Step 4
4. Combine with Beans and Broth: Add the white beans, cooked chorizo, and chicken or vegetable broth. Stir everything together and bring to a simmer. Lower the heat and let it cook for 10–15 minutes, allowing the flavors to meld.
Step 5
5. Adjust Seasoning and Serve: Taste and adjust salt and pepper as needed. Serve hot, garnished with fresh parsley or cilantro, with crusty bread on the side.
