Step 1
In a medium saucepan on medium heat, combine maple syrup, milk, cocoa powder.
Step 2
Cut butter and add chunks. Boil for 1 minute, stirring constantly.
Step 3
Remove from heat.
Step 4
Add peanut butter & vanilla, stir well. Fold in oats and coconut until well incorporated.
Step 5
Drop or make into balls on waxed paper cookie sheet or press into 9x13 pan. Refrigerate for 30 minutes. (If making bars, remove and cut into 1-inch squares.
Step 6
Keep refrigerated.
