Instructions

Step 1
Boil potatoes in salted water for 15 minutes or until fork tender. Drain and mash, adding in half the butter and milk or cream.
Step 2
While potatoes are cooking, Dice and cook the bacon in a large skillet. (Reserve 2 tablespoons of the bacon fat and use it for pan-frying the cabbage and onion.) Place cooked bacon on a paper towel to drain and finish potatoes.
Step 3
Return reserved bacon fat to the skillet and add onions. Saute until soft and then add diced cabbage. Saute until cabbage is tender then add mixture to mashed potatoes along with half the bacon bits. Top with remaining bacon and butter.
