Instructions
Step 1
Cook the squash in the oven for 30 minutes or until fork tender.
Step 2
In a food processor, add the cooked squash, some ricotta, cheese, 30g breadcrumbs, a pinch of salt and pepper and mix everything for 30 seconds. Form some patties with your hands, cover them with the remaining 20g breadcrumbs and cook in a pan with a drizzle of olive oil for 5 mins on each side. Buon appetito!
