Instructions
Step 1
Cook noodles according to packet instructions.
Step 2
Poach chicken in boiling water. Allow to cool, and then slice.
Step 3
Assemble salad. Combine cooked noodles, chicken, cabbage, cucumber, carrot, mint and peanuts.
Step 4
Make the dressing. Whisk together water, peanut butter, lime juice, honey, soy sauce and ginger. Add small amounts of water to thin if required.
Step 5
Divide salad into two serves and store leftovers in the fridge. When ready to serve, pour over dressing.
