Artusi's ragu alla bolognese

This is the oldest and original recipe of bolognese. Found in a journal by Artusi. You can also use this ragu recipe in Lasagne if you want.

Instructions

Step 1
Finely dice onion,carrot and celery
Step 2
Brown off mince, pancetta with onions, carrot and celery
Step 3
Add in nutmeg, pepper and veg stock pinch of flour.
Step 4
Add butter and leave slow cooking for 2-4 hrs.
Step 5
Cook you desired pasta, when ready then mix into bolognese (always do pasta to sauce)
Step 6
Dish up and serve with Parmesan grated on top.
Step 7
Additional you can add to at the beginning are small slices of mushroom or truffle or even cook with liver to add taste or add half a glass or cream (cream/milk tenders the mince)
