For the apple mix

1 cupgranulated sugar
2eggs
1 teaspoonvanilla extract
¼ cupgreek yogurt
¼ cupbuttermilk
1 Tablespoonbaking powder
½ tspcardamom
1 tspcinnamon
¼ tspnutmeg
½ teaspoonsalt
2 cupsall purpose flour
For the swirl
Instructions
Step 1
Chop and combine apple ingredients.
Step 2
Combine all crumble ingredients until a wet sand texture
Step 3
Combine ingredients for the swirl until smooth
Step 4
In a large mixing bowl, combine the melted butter and sugar until combined . Add the eggs in one at a time. Add the greek yoghurt, buttermilk, and vanilla extract. Add all the dry ingredients. Mix until it begins to come together (not fully incorporated), then carefully stir in apple mix
Step 5
Layer the batter with swirls of cinnamon butter, and top with the crumble Sprinkle the tops of each muffin with about 2 Tablespoons of the crumble mixture, pressing the crumble gently into the batter, so it sticks
Step 6
Bake on 175 c or 350 f for 20-30 min until golden and fully cooked. Remove from oven and allow to cool for at least 15 minutes
