Step 1
In a pot, boil water, add macaroni and salt. Stir occasionally especially at the start to prevent sticking.
Step 2
Before making the sauce, combine all your seasonings in a small bowl and measure out your milk. Warm slightly if chilled from the fridge.
Step 3
In a separate pot, melt butter and add half your spices on a medium heat. Whisk and add your flour. Keep whisking to form a roux (paste like texture with all the butter absorbed into the flour, be careful not to burn this). Slowly add a little milk at a time to build your sauce and continue whisking. Once thickened and lump free, add the remaining milk a little at a time and the other half of your spices. Continue whisking and add cheeses a little at a time + cream cheese. Cook on a medium heat and whisk for a few minutes.
Step 4
Once the macaroni is cooked, add to the sauce with 3 tbsp of the water from the macaroni. You can also marinate and cook some cubed chicken breast to add to your macaroni which is what we do 🫣 trust me it’s delicious!
Step 5
Mix well and add to a baking dish. Top with cheese and oregano and bake uncovered for 15/20 mins in the oven at 180°C. Grill for 5 mins in the grill for the crispy top.

Note: you can also make this ahead of time and freeze in foil containers which is what we do.
