Instructions
Step 1
Cook pasta according to instructions on packet until to an al dente texture. Make sure to reserve some pasta water for later.

Step 2
Meanwhile melt the butter in a nonstick pan until it starts to bubble up, then add in flour and whisk. Add in the milk slowly, and whisk until the roux has no lumps.



Step 3
Add in the cheeses, mustard, paprika, salt and black pepper, whisk it all together. Then mix in the pasta with the sauce and a bit of the pasta water too. Serve in a bowl, and garnish with more Parmesan or Gruyère cheese.
