Old Fashion Oat Rolls

Soft, fluffy with a hint of sweet. These wonderful dinner rolls have a good dose of heart healthy oats and are wonderful for any occasion. I made them once for Thanksgiving and I am now forever obligated to, "bring the rolls." I have to make a double batch not because the family is so large, but because they go so fast.

Instructions
Step 1
Bring 2 cups water to a boil in a medium saucepan


Step 2
Add in oats and butter, stirring constantly, 1 minute.


Step 3
Remove from heat; let cool to 110 degrees.
Step 4
Add yeast and sugar to to a measuring cup with the 1/2 cup of water and let proof.

Step 5
Mix together the flour, salt and brown sugar, and then integrate the oat and yeast mixtures until loosely combined



Step 6
Turn dough out onto a floured surface; knead by hand till smooth and elastic (about 5 minutes) or in bread mixer with dough hook 2 to 3 minutes.
Step 7
Place in a lightly greased bowl, ideally with a neutral oil like vegetable.

Step 8
Cover and let rise for about an hour or until double in bulk.
Step 9
Punch down dough and divide in half; shape each portion into 8 balls.
Step 10
Place evenly into lightly greased pan(s) or a pan(s) with lined with parchment paper

Step 11

Cover and let rise in warm place free from drafts, 30 minutes or until doubled in bulk.
Step 12
Bake at 375 for 15 minutes or until golden brown.
