1 Tbspbacon grease
42galmond flour
⅛ cuplupin flour
1 tspSwerve
Confectioner
¾ tspbaking powder
⅛ tspxanthan gum
⅛ tspsalt
¼ cupshredded cheddar cheese
2 Tbspjalapeño peppers
chopped, drained
1egg
whisked
2 Tbspbutter
melted
3 Tbspalmond milk
¼ tspsweet corn extract
Instructions
Step 1
Preheat oven at 350F. Place bacon grease in 6-inch iron skillet and put in oven to heat pan. In a medium mixing bowl, add all the dry ingredients and stir to combine. Add the cheese and jalapeños into dry ingredients and stir to combine. Add the remaining ingredients, stirring until combined. Spread batter in pan and return to oven for 15 to 20 minutes until golden brown. Brush with butter and cut into 8 wedges.
