Instructions
Step 1
Use a vegetable peeler to ribbon the cucumber . Don’t use the seed bits as they will be too wet . Pat these dry with paper towels
Step 2
Lay the cucumber slice by slice slightly overlapping on some plastic wrap .
Step 3
Mix cream cheese dill scallions lemon juice salt and pepper in a bowl then spread all over the cucumbers .
Step 4
Add sliced salmon all over then use the plastic wrap to pull up the sides and roll it tightly. Twist and seal the ends of the plastic wrap then chill in the fridge until you want to serve . Slice into rolls and enjoy .
