Instructions
Step 1
Fry the sweet potato in olive oil for roughly 20 minutes.
Step 2
Add the onion and fry until the onion is beginning to soften
Step 3
Add the garlic, peppers and mushrooms and continue frying until soft
Step 4
Add the spices and fry for a minute
Step 5
Add the tomatoes and black beans and cook for 5 minutes
Step 6
In a clean frying pan, add a tortilla. Sprinkle some chest and a bit of parmesan. Put a large blob of the vegetable mix on one side. Top with coriander, which doesn't have to be chopped. Then fold over so it looks like a pasty.
Step 7
Turn over a few times so the tortilla hardens a bit and the cheese has melted inside.
Step 8
Place on a plate with the avocado and lime on the side. Squeeze the lime over the contents.
