Instructions
Step 1
Heat olive oil in a pot over medium heat. Add onion and garlic, cooking until softened, about 5 minutes.
Step 2
Add vegetable broth, white beans, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
Step 3
Add the spinach and cook for an additional 5 minutes until wilted.
Step 4
Serve hot.
