Instructions
Step 1
Add all to mixer, mix on low until incorporated, increase to med/high for 5-7 minutes or until passes stretch test. Shape to ball and cover for 2 hours
Step 2
NO KNEAD: in metal bowl add ingredients, stir to combine to shaggy mess with no dry clumps. Cover and let it rip for 12-18 hours
Step 3
Final 2 hours the same for both.
Step 4
Punch down, grab top portion and stretch up as far as it can, then fold to middle. Repeat on all 4 sides, then 2-4 turns of 10-2 to shape into ball. Cover for 1 hour.
Step 5
Repeat above, place into proofing bowl for 1 hour
Step 6
Preheat oven at 450 with Dutch oven inside for 30 minutes minimum
Step 7
Place loaf into Dutch oven, scoring the top. Place the top of the Dutch oven back and bake for 30 minutes. Remove lid and bake 10-15 minutes or until 200 internal temp
Step 8
Remove from ovens and let rest/cool
