Instructions

Step 1
Preheat oven to 400*
Step 2
Spray 6 - 2 cup oven safe, meal prep glass dishes with Pam. Set aside.
Step 3
Add eggs to large bowl and whisk.
Step 4
Add cottage cheese, onions, peppers and ham to eggs. Combine
Step 5
Evenly divide mixture between the 4 meal prep dishes.
Step 6
Top each with mozzarella.
Step 7
Place all 6 dishes on a cookie sheet and place in the preheated oven for 20-25 minutes or until center is set.
Step 8
Let rest for 5 minutes before serving.
Step 9
Can be saved in the refrigerator for up to 4 days. Reheat in the microwave for 30 seconds to 1 minute.
