Ingredients
6 servings

6 slicesbacon
cooded, diced

3 cupschicken stock

2 lbspotatoes
peeled & diced

1sweet onion
medium, peeled & diced

4 tablespoonsbacon grease

⅓ cupflour

12 ozEvaporated Milk

1 cupshredded cheddar cheese

½ cupsour cream

1 teaspoonsalt

½ teaspoonblack pepper
Leftover ham
optional

Instructions
Step 1
Add bacon, 3 cups chicken stock, potatoes, onion, and ham if using in slow cooker. Stir. Cook on low 6-8 hours or high 3-4 hours, or until potatoes are tender.
Step 2
Once the soup is cooked & ready to serve, cook butter in small saucepan over medium-high heat. Whisk in flour, cook 1 minute. Gradually add evaporated milk while whisking until mixture is smooth. Continue cooking until it simmers, stirring occasionally, and then it should get really thick.
Step 3
Immediately pour milk mixture into slow cooker with potatoes. Add in cheddar cheese, sour cream, salt, & pepper. Stir.
Step 4
Serve warm, garnished with desired toppings.
