Buttermilk marinade
4boneless skinless chicken thighs
pounded to even thickness
1 cupbuttermilk
¼ cupsriracha
1 tspsalt
1 tsppepper
1 tspchilli powder
1 tspgarlic powder
onion powder
Flour Mix
1 cupall purpose flour
3 Tbspcornstarch
1 Tbsppaprika powder
1 tspcayenne pepper
1 tspsalt
1 tsppepper
1 tspgarlic powder
1 tsponion powder
Home-made Buttermilk (If Needed)
Instructions
Step 1
1. In a medium bowl, combine the buttermilk, Sriracha, chilli powder, salt, pepper, garlic powder, and onion powder. Cut chicken in half and beat to an even thickness. Add chicken thighs to marinade and marinate in the fridge for at least 4 hours or overnight.
Step 2
2. Whisk together flour, cornstarch, paprika, salt, pepper, garlic powder, onion powder, and cayenne powder in a large bowl.
Step 3
3. Add 2 or so tbsp of the marinade to the mixture and mix with a fork. Dredge the chicken with the flour mixture, making sure each piece is evenly coated.
Step 4
4. Heat oil in a deep cas iron skillet/pot/wok until it reaches 165˚C. Fry the chicken for about 3-4 minutes on each side, or until golden brown. The thickest part of the chicken should register 75˚C. Rest on cooling rack for a few minutes.
