Crispy Fried Chicken

Instructions

Step 1
Remove the bones and gristle from the chicken thighs and cut them in half.
Step 2
In a separate bowl mix the marinade ingredients until combined.
Step 3
Add the chicken to the marinade and coat them thoroughly.
Step 4
Cover with cling film and place into the fridge for at least 4 hours, for best results leave overnight.
Step 5
In a separate bowl add the plain flour, cornstarch and bicarbonate of soda and mix well.
Step 6
Add in the remaining crispy coating ingredients and mix again until they are all combined.
Step 7
Heat the oil for deep frying to 170 degrees.
Step 8
Retrieve the marinated chicken from the fridge and one piece at a time into the flour mixture.
Step 9
Ensure to coat the chicken thoroughly, squeezing the flour into the chicken, gently tap off the excess and rest on a plate, repeat until all the chicken has been coated.
Step 10
Once the oil is at temperature, gently and carefully lower the chicken pieces into the hot oil ( I recommend using tongs to prevent hot oil from spitting on your skin)
Step 11
Cook for around 6 minutes (always check the chicken is cooked all the way through by cutting the thickest piece in half)
Step 12
Once cooked remove from the oil and drain onto some kitchen paper. Allow to rest for 2 minutes to ensure all the oil has drained
Step 13
Plate up with fries or your side of choice. Lick you’re lips and enjoy
