Instructions

Step 1
1. In a medium bowl, whisk dried yeast and sugar into the warm water. Leave for 10 minutes until frothy.

2. Sift the flour and salt into a large bowl and make a well in the centre.

3. Whisk yeast mixture again and pour into the well, followed by the olive oil.
Step 4
4. Mix altogether with a spoon and then use your hands until the dough comes together.

5. Tip out onto a lightly floured surface and knead for about 5 minutes until dough is smooth, shiny and elastic (it shouldn’t be sticky at all).

6. Shape the dough into a ball and leave to rest (covered) for about 15-20 minutes.

7. Meanwhile, heat up crushed tomatoes together with olive oil in a pan. Simmer and add tomato paste, sugar and spices. Leave to cool and blend using a hand-blender if a smoother consistency is desired.

8. Once dough has rested, form two balls. Using a rolling pin, roll each ball as thin as you can and place on a baking sheet lightly sprayed with olive oil.
Step 9
9. Top with tomato sauce, cheese and any desired toppings, drizzle with a little olive oil.
Step 10
10. Bake in a pre-heated oven set to 230°C (regular top/ bottom setting) for 10-12 minutes.
