Instructions

Step 1
Peel, core and thinly slice the cooking apple. Preheat the oven to 180c.
Step 2
Coat the meat with the flour, then place in the bottom of a large shallow casserole. Sprinkle the onions, carrots and apple slices on-top.
Step 3
Mix together the stock, tomato puree, lamb seasoning and salt, then pour into the casserole.
Step 4
Arrange the potato slices on top and cover the entire surface, place into the oven for 2 hours.
Step 5
Uncover the casserole and brush the potatoes with the melted butter. Sprinkle over the herbs then cook uncovered for a further 30 minutes to allow the potatoes to crisp.
