Ingredients

2 x 15 ozcans of chickpeas
garbanzo beans
¼ cupdiced tomatoes
1 cupfresh spinach
1 cupchicken broth
3chicken bullion cubes
to taste
1 cupalmond milk
or coconut milk
2 tablespoonsolive oil
½ cuponions
diced
1 teaspoonsalt
1 tablespoonginger
fresh or powder
1 tablespoongarlic
minced or powder
2 tablespoonscurry powder
½ cupcilantro leaves
Instructions
Step 1
Turn on Instant Pot 'sauté' setting.
Step 2
Sauté onion, salt, garlic, ginger and curry powder in olive oil.
Step 3
Mix in diced tomatoes, and turn off 'sauté' setting.
Step 4
Add chicken broth, almond milk, spinach, and cilantro to pot.
Step 5
Pressure cook for 5 minutes.
